Does that mean the only thing actually really stereo on this track is the strings and Bev's drums since everything else seems to be cancelled out.

@thatmuse76 When an out of phase stereo track is created the result is a mono sound. What's cancelled out is the instruments/vioce that is "centered" in the recording. Any sounds that are panned slightly left or right remain in place and can still be heard.
