  • The Mexican tortilla has Arab influence, but the one that was brought from The Arab world to Spain and from Spain to México and they have diferences, In México the authentic flour tortilla is made from hole grain wheat and lard, it has no oil and it has no yeast. The original Arab bread was made in an oven( stone, brick) for centuries.

  • @jl1249 I am sorry, but you need to check you sources. There is no Arab influence on tprtillas. The latter was developed in pre-Conquest Mexico, long before the people of the New World had contact with outsiders. BTW, tortrilla dough, as far is I know, is made wirh cornmeal or masa harina, also a corn product. Corn is a native plant of the Americas. .

  • @sufganiot , not sure about the sources jl1249 has, but i am sure that every culture around the world, old or new, has some sort of flat bread that is made with the major crop they cultivate. Arabs make it with wheat flour while Mexicans and south Americans make it with cornmeal or masa harina.

  • @IsmeeZainab It looks like small handfull of shredded mozzarella, small handfull of shredded cheddar, tablespoon of za'atar, small handfull of finely chopped cucumber, small handfull of sliced black olives and some tomato slices.

  • @Na3mAl3o0od, بآمكانك وضع اي نوع جبن من اختيارك، او لبنه، في العاده يتم وضع جبنه حلوم او عكاوي او القشقوان. الزعتر مع زيت الزيتون و اضافه الخيار و البندوره يعطيها طعم لذيذ

  • ahhhhhhh ya salam...this take me back to Lebanon to my child hood years when I was 6 - 7 years old, watching my mom and grandma make the Saj bread, using wood as a heat source...thank you for taking me back in time...

  • @wasiirka100 , you may do it on the stove top using a regular frying pan, but make sure to heat it to the max. good luck! Also you can use a flat pan and bake the dough in the oven..simple and always a success.

    Is there a reason why the heating surface is curved though? Just to make it easier to apply and take off or what? I saw another video where the woman was using an upside down wok, but she was using it outside on an actual fire pit. I am not sure if the wok would heat up well on a regualr gas stove or on an electric stove. Also is the "puffy" pad needed to apply the dough to the frying pan or it just makes things easier?

  • That is the tortilla bread of SONORA Mexico, but in Sonora Mexico people came from Andalucia and made it whit lard or fat from cows, cause they where converted to christian catholics

  • Hi: Is this like the Iraqi bread? My son is in the US military and says that the very kind ladies there give the soldiers bread when they patrol the towns to keep the people safe. He told me that these ladies make the best bread in the world. I'd like to make it for him when he comes home.

  • I think every country has its own version of flat bread..this bread is widely made in the middle east with slight variation...but you can make it using this recipe. good luck!

    hi iam from iraq and first i hope your son will be back for you safely, this bread is not like the iraqi bread its diffrent kind this one is saj bread its much lighter its used for sandwiches the iraqi bread need special oven made from clay and its not easy to make actually i miss it too and its really very tasty i think your son have a good taste when he come back you can take him to persian resturant they make the same bread my best wishes to your son and to all iraqi people

    hi first i hope your son will be back to you safely ,this bread is diffrent the iraqi bread dough is very moist and need a special clay dome oven i miss the iraqi bread too its reaaly irresistible when its just comeout of the oven your son have a good taste ,if you want you can take him to persian resturant they make similar bread , may god bless all the poor iraqi people and the soldiers they are both victims

    Iraqi bread is a little different because its made in a tandoor, not on a saj. You get them at Indian, Pakistani or Persian/Afghan restaurants and they are known as Nan.

  • You would need a cast Iron wok to pull this off I tried before with a regular wok upside down and it will not work. The heat needs to be even and of course a heavier wok will stay in place as well.

    Please let me know of any other ways to cook it other than a wok. Thanks

  • You are right! with an iron cast wok you get the best results. i think this is the only way i know how it is done..even in villages through out the middle east they use this method with the wok upside down. Saj in Arabic means wok, so the bread is called after the tool that is used to bake.

    But maybe you can try an frying pan?? not sure if you will get the same results though.

  • I had a gas stove put in my basement ..i take out the racks and toss the flat ed circular dough on bottom of the oven at 500 degrees. works wonderful! if any one is interested

    في الحقيقه انك تستطيع رق العجين باليدين يحتاج الى خبره في عمل الخبز...اعتقد انه المحاوله الكثيره لا بد انها بأتي بنتيجه. شكل الصاج المحدب او المستوي يخبز بنفس الطريقه و لكن شكل الرغيف شويه في اختلاف, لكن كله طيب و لذيذ.

  • Dear alfatenh, there are millions of Arabs who live abroad in foreign countries. Simply, not all of them have access to Arabic keyboard or not trained to type in Arabic. Please take that into considerations. Thanks.
