Turnover in inverted comma's is not actually about money.

It's considered as a duration of time of actually selling products from your inventory, how quickly you can sell products if their SKU's, in this case it's how many orders for food (bums on seats as it where).

Turnover is not per se actual income but some contribute that to revenue, but when you talk about staff turnover, that's the number of people that are successfully employed vs the staff leaving, that total of leaving is turnover.
