A talking snake has never been observed, a man walking on water has never been observed, spontaneous formation of wine from water has never been observed, etc. Also, Genesis claims there were land plants on earth before the sun was created- a scientific impossibility.

No, according to un-Biblical scripts. At that time there were many stories of savior-types going around. It wouldn't have been unlikely to hear of many people claiming to have seen Jesus' resurection. The only challange is determining if they are real witnesses or not. That is the real challange when authenticating or denying all these witnesses, they could be lying, they could be telling the truth.
