@Slamaxe is there perhaps a video that explains what he is wearing and why? it looks like some type of multiple hood arrangement attached to an army field jacket? from what I have seen so far in these vids I am sure there must be a good reason for it.
He set up his east-west line on the north side (shadow side) of his vertical stick. So from the angle the camera was looking at it, east was to the right, and west was to the left.
If it had been the southern hemisphere, then under the same circumstances it would have been the opposite.
if you don't like this guy or feel his info is lacking STOP WATCHING!!! if it doesn't work make a video reply and show where he went wrong so all of us can learn.
The magnetic declination (also known as grid magnetic angle in military circles, if the grid is aligned to true north) at any point on the Earth is the angle between the local magnetic field -- the direction the north end of a compass points -- and true north. The declination is positive when the magnetic north is east of true north. The term magnetic variation is equivalent, and is more often used in aeronautical and other forms of navigation. Hope this helps. :)
I appreciate the instruction. Some people just don't realize that gps units can fail, get broken, or lose battery power. I prefer to have "Plan B" as much as possible.
It really only works if you are using it for an hour or so in the morning or afternoon. If you start in the morning with the sun on your right shoulder and keep it there you will walk in a circle. I suppose that could be one way to get you back near your starting point if have the same number of hours before and after noon.

@ThoroughBredCanadian The shadow always moves towards east, so as Ron says, the first shadow is towards west and the last shadow is towards east.

Nice Work Bro. I believe that there's
one term that you aren't using correctly.
It's Magnetic VARIATION, not magnetic
DECLINATION.
