both the water and the bottle have to be clean and stable when you are cooling. in short you are super cooling the water (cooling somthing below its frezzing point)

Its called super cooled the water has to be under 32F for it to work for those its the freezing point of water if cooled faster then it can freez then it wont freez it pretty damn cool i think if u can buy liquid nitrogen a lot of fun good vid kid

WARNING !!! SCIENCE CONTENT- The water is super cooled. This only works with purified water. Natural water is filled with impurities that water molecules can cling to and begin forming solid chains as the temperature approaches 32F. Pure water has had these impurities filtered out, so it's freezing point is much lower. By striking Super cooled water it forces the molecules to collide and form the crystals when the crash into each other.
