  • If you're going to use oil, use something with a more neutral flavour rather than olive oil.

    Frying in butter alone is the best choice though since you'll get a much crisper and tastier surface texture than that of in the video. :P

    Besides, oil is not a very good option at all to fry in if you're go to make a sauce out of the excessive grease and spices, since it's going to end up as an emulsion.

    Add soy to the sauce instead of extra salt. It'll give it a darker look and it mixes better. :)

  • There are many ways to make genuine Swedish meatballs, just as there are many ways to make real Italian sauce. The olive oil combined with the butter raises the temperature at which they can fry without burning. It is a chemical thing used often done by chefs. Look up Tina Nordstrom's versions on Scandinavian Cooking on PBS. She makes them without the breadcrumbs, or with a combination of ground pork and beef. Larger meatballs are for meals, smaller are for appetizers.

  • I mean no disrespect, this is a fair try, but very American. Allspice? Olive oil? And you can just add breadcrumbs and milk directly into the bowl, no need to let it soak. Lingonberries are not optional, if you don't use them you can't call it Swedish. And the sauce she makes in the video is not anyway near how to make the sauce that goes with meatballs. You are way better of just using whats left in the pan from the meatballs and add cream, salt, some white pepper. Nice try though.

  • @mrErikLundgren Actually, you need to let it soak or else the meatballs could end up tasting like bread really. But it should soak for more than 10 minutes, not 5-10. Allspice (kryddpeppar) isn't that uncommon to use, but I don't think I ever have :) Sauce is really bad though, the whole point with the sauce is the cream! Why on earth would we call it gräddsås (cream sauce) if there's no cream in it?

  • @Ilontappaja Maybe it depends on the breadcrumbs then, I have had my monthly share of Swedish meatballs my entire life and they've never tasted bread but I believe your word for it, try some other crumbs and don,t let em soak and I'll try soaking. But I still believe that the true Swedish way is not soaking if we are to be picky. And about allspice, that's just a "modern fashion". Just as all around, aromat and grill krydda. And any of those does not belong in the recipe. In my honest opinion.

  • @mrErikLundgren Nah, I do believe the swedish way is to soak the breadcrumbs, that's what we've always done in my family and that's what's stated in at least my old cookery books. But I guess we all have our different recipes and ways to make meatballs, so not much to argue about really =) all spice has been used in meatballs at least since 80's, but have never used it myself. But I'll try to make meatballs your way, without soaking, next time, sure will save me some time at least =)

  • @Ilontappaja We agree to disagree on the crumbs, thats fine. Since the 80's but that why i put the "" in the "modern fashion", it's relatively new comparing to the recipe. Even nutmeg made an attempt to join in during the 70's. There's nothing wrong with trying variations out. But since this video's about Swedish balls you'd think they might want to represent the original. But if you'd want to try an Jap/Chi variety, try adding chopped ginger, garlic, nira grass and some chili based sesame oil.

  • Lingonberry is not optional, it's required. Also, eat with some boiled potatos.

  • I got a great recipe off the foodnetwork's site. This one has Cordamom, cinnamon, cloves in it. I use Ritz crackers instead of bread crumbs. Wistashire sauce, seasoned salt & gravy powder mix& minced onion. Fry 3 onions in butter, when done add to Beef broth, cream. The meatballs are fried in more butter. When done add them to the liquid& let set over night so meat aborbs the flavor. Choose your amount of ingredants. Serve with egg noodles or pasta.

  • @inspire734 Forgot to add a thickener, like flour to the liquid broth & cream before you add the meatballs to it. Before I mention Fry 3 onions, You add the previous ingredients with ground beef. Use a large pot for broth & cream & cooked onions. Fry the meat balls until brown all over. Then put them in with the broth, cream & cooked onions.

    This is one of the best. I make them at Christmas time.

  • ...yeah you don't use olive oil for Swedish meatballs. Just regular butter... also this helps to put a more tasty color on the meatballs when they're finished.

  • i thought you used sourcream /mushroom soup and worschestshire sauceto make them with and then afterwards poured them and the sauce over noodles thats how my sister use to make them and they were good.

  • Actually all of the specified ingredients are included in most Swedish meatball recipies apart from allspice. Frying in part butter and part olive oil is common among chefs to make make the frying a bit healthier. Finally Brunsås, well, that's how it's made except that you can actually use what's in the pan which gives a richer taste although less healthy.

    You first mix bredcrumbs and ground beef together with salt and pepper. Then add lean cream or fatty milk. Then just form them and cook'em until not brown (and not as lamely brown as in this vid). Done, serve.

    And yeah, lingonberrys is a must to this.:)

    And yeah, I am a swede, so dont talk shit about me not knowing what I am talking about. What was she thinking with the olive oil? Geez, its swedish, not italian!

  • Maybe, I'm was just giving you how my grandma has allways made them and then they are awesome! BTW, looked at this again... The bread crumb thing seems to be a bit misunderstood... It is supposed to be hard bread (in swedish skorpor) that are extremely fine crushed into "skorpmjöl" or "hard bread flour". Good luck with the cooking!

  • ok im from sweden and i dont know where they got the idea of using bread. seems silly, i got a tip to make then even more delicious. add some "unwhipped" cream or creame Fraishe ( or however its spelled )

  • I use "ströbröd" just as my mother did and to me they can´t be more swedish than that. I think bread crums are close enough.

    However on a "smörgåsbord" I would never serve them with gravy. Neither would I fry them in olive oil (rather butter) or as many at the time as they do in the video.

  • Pretty close to the original Swedish meatballs. The meat should be half lean beef and half minced pork ( Some older recepies specifies one third of each: Veal, beef, pork) And you should NEVER fry meatballs in Oliveoil. Use butter mixed with margarine or a neutral oil instead. It´s also nice to add some full cream in to the gravy. Serve with Boild or Mashed potatoes, Lingonberry jam and a piccle of choise (I perfer cucumber) and you got a meal fit for a lumberjack.
