Those big rounds are so gorgeous! What were you going to say about squeezing the cheese in your hand like play dough? Does the more pliable cheese make a better cheddar?
Chris, Excellent documentary and certainly the most detailed representation of the process I have found anywhere. I haven't tried your cheeses despite being from the UK, now living in Bulgaria, cheddar is pretty rare so I have turned my hand to making my own (on a very small scale). Your advice in these videos has been invaluable already. BIG thanks.
Great documentary! I think it's great that the company is making the cheese from raw dairy. I wonder it still uses raw milk these days.
The process was explained well and the footage was great. I'd hate to have to wrestle with 90 lbs. rounds! This is allot of work. I appreciated Chris' explanation of what he looks for after the plug is pulled from the round.
Awesome series Chris. Dairy prices in New Zealand have doubled in the last 12 months so decided to investigate the hard cheese making process to see whats involved. I already have a background in dairy, evaporator and drier operator making skimmilk concentrate and whey, skimmilk, buttermilk and yoghurt powders. So now i am off to see how big a batch i have to make to make it more economical, and more fun, than buying it in the shops. Cheers.
This was shot in VHS some 20 years ago, during the infancy of home video cameras. Thanks for your interest. The video is still being shown at the Ingersol Cheese Museum (Ontario, Canada)as most cheese is no longer thins labour intensive nor is it made in 90 pound rounds.
