  • Those are not proper pierogi, filling should be made with potatoes, cottage type cheese, fried onion and lots of black pepper

  • @Ptah101 Thanks for your comment, we found that the cottage type cheese is hard to find in England, ordinary cottage cheese is too wet, and we always use fried onions and plenty of pepper :)

  • @BeriBeriChan We like to use berries, any kind and they are great with a sprinkling sugar and creme frais :)

  • just needed bacon bits ....real bacon bacon bits in the filler. Toppings should include carmelized sweet onions and sourcream.....and maybe fry them too before toppings after boiling. 'sniff sniff' miss my momma : (

  • These look and sound really good, but was wondering if you could clarify the measurements. In the video, it says to use 4 cups of flour, but the amount listed in the description is 2 cups. What is the correct measurement of flour, and how long would you say you knead the dough? Please let me know, I hope you don't mind my asking.

If you used only 2 cups of flour instead of 4 you would have less dough and would have left over filling thats all.There are so many different Perogi Recipes! And you can stuff them with any filling meat cheese fruit vetgee etc. And you can spice the fillings with any spice! For example onion, Garlic, scallon etc. etc.!

What I do to top them is sautee just until golden in extra virgin olive oil, take them out, leave the oil in, and add fresh diced tomatoes and sliced onion, a little salt and chrushed red pepper, and cook until the onions are soft and it looks like a sauce. Great topping. You can also add fresh garlic and spinach.

  • This meal is very common in Russia too, known as "vareniki". We made them with salted or sweet cottage cheese, mashed potatos w/fried onions, apples, cherries, mashrooms, cabbage etc. And don't forget to put some sour cream or melted butter on them! :)

  • @emily7animals We use white stilton but any white and crumbly cheese will do. You have to boil them in water first and then fry them in butter afterwards if you like.

    The man who first developed Pierogi (dumplings) is man from Italy i don't know he is name but he made differents ones :) he doesn't use cottage cheese and patatoes (he used sauerkraut , meat and mushrooms i think)

    But the Polish man developed that into a pierogi you can put patatoes and cottage cheese :)

  • I tried the recipe and put my own twist on it. Fried them with mashed potatoes ragoo mixture and ground beef and then poured the ragoo mixture on top all my friends liked it .my first at making the dough.Thanks for letting me learn. your awesome .keep up the good work .I know i will never forget!   • I'm 77 yrs old. My grandmother filled pierogi with meat (mix of hamburg, pork, egg, bread and God knows what else) which were and are still my favorites. Very few of my Polish acquaintances are familiar with this filling. Comments? In addition to potatoes she also filled them with farmer's cheese (good doused with sour cream), fruit (blueberries, apricots) and fried cabbage. All were fried in butter (not very healthy but I don't get them very often.) My daughters still make all of these.

  • I like to sautee mine in butter for a few minutes after boiling to crisp them up a bit. Gives a nice butter flavor, and a nice texture. I've also (after boiling) brushed them with butter and grilled them for 2 minutes on each side.

    They turn out awesome!

  • Good luck, make a batch and freeze them as they are quite time-consuming, they freeze ok if you wrap them individually in clip wrap so they don't stick together:)

  • So, you're one lucky guy , It would be wonderful to have fresh pierogi couple times in a week . I must say that pierogi that are sold in supermarket from the fridge are always bad taste, only home made are the choice

  • I know it's not traditional, but feta cheese is so good with the potato filling! And try adding some diced sauteed apples... Yum.

    And you can freeze them after they're made by laying them (uncooked) on a cookie sheet, putting them in the freezer. When they're frozen through, put them in a freezer baggie.

  • Sounds like a nice idea with feta! We always freeze them by cutting strips of plastic bags otherwise they stick together, I never thought about the way you have suggested!:)

  • I just mean that the original pierogi ruskie (this kind with potatoes and cheese) filling consists of potatoes, cottage cheese, onions. other traditional kinds of pierogi are with meat, cabbage and mushrooms, bryndza (kind of cheese), lentils, strawberries and blueberries. try as many as possible :)

  • why do you all people use hard cheese for pierogi?! in the recipe there is white cottage cheese. i can't imagine making pierogi with this kind of cheese you used. and hot water is used for the dough instead of milk.

  • I am sure there are variations. In England we use a crumbly cheese called White Stilton, I can imagine cottage cheese being quite wet but I will give it a try, thanks for your comment:)

  • The variety of cheese most commonly used for filling pierogi is a crumbly, semi-firm version of cottage cheese. It's known in Poland as Serowiec, or farmer's cheese in the U.S. and is used in much the same fashion as German Quark. If this particular variety is not available or doesn't quite fit your budget (it can be ridiculously expensive), substitute ricotta that has been drained of excess whey overnight in a cool place. This actually works best outside the refrigerator, preferably a basement

  • Thanks for your comment. In Poland they use a white crumbly cheese so that it does not turn to string, in england we use either Cheshire, Wensleydale or white stilton:)

  • my polish grandmother always used either pot cheese or farmer's cheese, whichever is available (typically farmer's cheese is easy to get in local groceries; pot cheese usually can be found in farmer's markets)

    Get a frying pan, put some butter on it, get it hot, throw in some bread crumbs and vegetta or salt until crumbs turn golden :)

    Boil pierogis as normal and then dump them for a minute or so into this hot mix.

    Now to the radical part

    Try eating them with sour cream or Ketchup. Or both. Most polish people think this is disgrace but it tastes good.

  • Sounds good to me! I have ketchup on mine but my polish girlfriend thinks is is sacreledge to mess with their traditional dish! I wouldn't mind if someone was to change our roast beef or fish and chips in some way!:)
