I tried to make Spinach Artichoke Dip once before from another recipe (using sour cream and Philadelphia Cream Cheese, which you bake instead of cooking on the stove as this recipe) and it was a DISASTER!

Oh and I suggest you put a measurement list of all the ingredients in your description. I am lost as to how much heavy cream, spinach, or even salt was added in.
they obviously wanted to do the actual video in one take. that roux should cook for 10 minutes (think he says that). you'll taste raw flour if you don't cook the roux completely.
It looks like he didn't cut it but I'm sure you could give the spinach a rough chop if you wanted smaller leaves. Might not be a bad idea for dip. Regardless it looks great! The kind of thing that people who think they hate spinach could try :-).
prefer it as a dip with either BREAD or TORTILLA CHIPS nice job
