For those who are idiots, the ice water is just if you want to hold them in the fridge for a few days. You can also do this as a quick dip to make sure the food stays warm, BUT doesn't cook the egg all the way through. If you poach the egg and leave it on a plate while it's still hot for a few minutes the yolk will cook through completely from it's own heat. You halt the cooking process if you are making a bunch for like a family. If you're just doing it for yourself you don't have to do this.
