You define it by saying that if you were to repeat the experiment over and over and get different CIs over and over, on average 95% of them would contain the mean, and 5% wouldn't. You can use a probability statement to a CI, or use the word "confident". Either is ok. But don't word it as if the *mean* has a confidence. That's a fixed value.
in frequentist terminology, "probability" carries with it the concept of 'repeated experiment'. in this case the repeated creation of CIs. that's already understood. the phrase, "the probability is 95% that..." means that repeated measurements WERE conducted. it's not referring to ONE CI in the experiment. it refers to the probability of a future CI FROM those experiments. so we can, and do, refer to the probability of CIs because it's understood what probability means.
if i may make a correction on your video. technically the confidence interval (CI) at, say, 95%, would be: "the probability is 95% that the CI contains the true mean". by using the phrase "we are 95% confident that the mean is between..." is not really accurate since it is the CI that varies, not the mean. the true mean is fixed. it's a subtlety that should be emphasized. cheers. keep making more videos! :)
