The non Israelite did join the covenant when they converted to the worship of Yahweh. They were considered under the law (Num 15:15-16, Lev 24:22). Those who became followers of Yahweh would be Israelites in Yahweh's view (Jer 12:16) and could participate in Passover (Ex 12:48-49).

I too would be interested in your perspective on this subject. I know I have my own view, as does everyone. But when one really yearns for truth, they search for it. And when you come to your conclusions, I know it will be an education for me as well.
Also, non-hebrews were performing animal sacrifices before the law of moses,AND they were acceptable to God. Able, Iyob , to name a few. So now, if the Law of moses isnt for non-israelites, then they are still allowed to perform these things outside the temple since the commandment of only sacrificing in the Temple is for the Hebrews only, and all the laws about the lewites being the ones allowed to perform them also dont apply since they are also in the Law
My current understanding, is that people are innocent of many of the rules, but many laws are obvious like, "dont murder" , but when one has been studying the Word of God for a while, the time will come when they will need to step it up a notch. The "bare-minumum" is only for new people and people that have never heard of God, but when one learns God's will (different laws) they are to apply them as they go. God's laws are good, so there would be no logical reason to not want to do them

If a pig is only unclean to a holy jew, then how would noah know what animals were clean or unclean? then noah took 2 of every animal since there was no unclean animal to that goy .
If eating pork is a bad thing in th eyes of God, why would it be ok for non-isralites to eat pork? and if it ISNT a bad thing, then why would He tell Israelites not to ? The nations have more obligations -- HOWEVER, the "Laws of Noah" are the bare minimal obligations which non-Israelite society has the divinely commanded responsibility to teach and enforce.
The Laws of Noah are not the "the proper path," nor are they termed such. The Laws of Noah are the MINIMAL path - with regard to avoiding the capital punishment.

That's because the Torah refers to two types of "Stranger." ("Stranger" is a bad translation. The word more closely means immigrant. The Hebrew word for a totally foreign stranger is nokhri.)
The two types of stranger is "ger bish'orekham" (the immigrant in your gates) and the "ger ha-gor" (the [totally] immigrated immigrant).
The "ger ha-gor" (the immigrated / naturalized immigrant) is the "stranger" who is OBLIGATED to keep Shabbat. He has placed himself under Torah as an Israelite.
There is some scriptural basis for the noahide laws, though there is not a completely codified list of them in the bible. The issue is accepthing the oral law or not. Now, as far as the 7 laws go, it is the absolute minimum for a gentile to get saved. It is good for a gentile to do additional things, whether it be prayer or commandments of the torah. Keeping shabbat in the way that jews keep the shabbat is the only commandment forbidden to a gentile.(i believe)

However, voluntary acceptance of additional Torah laws - and all the more so full acceptance of Torah by joining the people of Israel - is without a doubt the proper and ideal path, for the person who is able. The desire is that full joining in the Covenant of Israel will be an expression of personal desire, and not something done by force.
Also, a non-Israelite is encouraged to voluntarily keep extra commandments of Torah, in addition to the Laws of Noah, even if without full conversion...
