What if a song doesn't start in G. That's not the way to learn it. The way to learn to play by ear is to sit there picking notes and working out what note it is. Then when you can do that start tuning your guitar by ear. The when you can do that, pick a chromatic scale, take G for example and learn where every note you picking fits into that scale. Then try two notes at a time, then three, then you can start picking up chords in songs.
