Highland Cattle loose the long hair in hot climates. Here in Australia the hair falls out over summer. There are some highland folds (studs) in Texas. If you purchase an animal that has been bred and raised in a climate such as yours, they should be fine. They are very hardy animals.

@Mofila yes it has a strong distinctive taste and its very low in cholesterol and fat in general. Top restaurants can't get enough of it.
