  • I'm a super amateur cook anyway whenever I try to cook pork chops or chicken breasts with a little oil on anything more than medium heat the oil stars to explode like crazy and I have to turn it down cause I feel like that shit will burn me, anyway is that supposed to happen or am I just doing something wrong?

  • What I dislike in this recipe: He uses premade-putmeathere-seasoning, which in nearly ALL cases(including "organic" contains msg or other flavorenhacers("yeast extracts").

    And, judging by all the other vids, Chef J. normally doesnt need this. =/ Would be better if he had mixed up his own batch of appropriate seasoning(Cheyenne Pepper for sure(^^), and, judging by color, at least paprika, salt and- something^^).

  • I made this tonight. My husband loved it (he does not like pork, btw). We had gravy left and my husband wanted some with chicken with it. So I cooked up some chicken and let it simmer with the left over gravy. Turned out great!

    I dont know why I never thought to add buttermilk to my gravy! I usually do a splash of milk with a splash of vinegar, which is in essence the same as buttermilk. Just never occurred to me to use actual buttermilk. Gonna do this next time!

  • I just did this, I added chopped portobello mushroom (about halfway through), subbed apple cider vinegar and a splash of regular milk for the buttermilk, skipped the vegetable oil (the pork sealed in its own fat just fine), and also skipped the poultry seasoning (the stock I had was chickeny enough) - came out amazing, almost like marsala.

  • rice ? so stupid . so you cut your chops on the rice so the rice goes everywere and get squashed and slopy , why rice ? it has no position on this plate .

  • I made this two nights ago, followed the directions perfectly and my "gravy" still came out not thick at all, it was more like soup than gravy :( Regardless, it was still very tasty :)

  • @PanCakePB use one cup of milk and a tabelspoon of lemon juice or white vinegar. let that mixture sit at room temp for 10 mins and you have buttermilk.

  • @HarumiGirl Thanks for that bit of info, I didn't know that...and a few times, I needed buttermilk, just for a receipe, now, it won't happen again.

  • Listen to him on browning the onions.  I didn't and it didn't come out as nice. Also, why didn't the chops brown? They had too much water intead.

  • @hsagal04 It is only because I felt brave, otherwise, you would have beaten me to the punch...This week end, I will try the Creamed Spinach recipe... But in the S.P.C, I put more onion than was needed, I LOVE onion!! Did your husband like the dish? I also sort of REALLY browned the chops.

  • @hsagal04 Did he?? That's really great! You know, I think I'll make the S.P.C's again this Sunday. I also will REALLY brown the onions, along with the chops. The thing is, I HATE cleaning the kitchen afterward, I mean REALLY hate it. I wonder if it's possible to prepare all this late Sat night, then get it together on Sunday morning, put it in the crock pot, on low, come back from Church at 12pm, then eat by 1230. What do you think?

  • @418sadeyes I know what you mean about the weather I was sweating while browning the chops. Ohh and about the kitchen it is my worst enemy. I’d rather a million times do laundry than clean the kitchen. Lol. Good to know I’m not alone. It should work if you cook Saturday night and then heat it up Sunday. I also don’t go fancy cooking on Sundays.

  • @hsagal04 Sorry I took abit to answer..I made S.P.C's for dinner again, tonight. I just love this dish.... I piled up the onions as usual..This time, I made mashed potatoes, and put the SPC's on the m.p., instead of the rice.

    But on Sunday, I will probably do it again, in the crock pot...I'm with you, I JUST hate cooking, but I hate cleaning even more.. I have this horrible woman who writes these ugly posts to me, she is scary. It ruined my whole day. This is as fancy as I get, in cooking.

  • @hsagal04 One last thing...I think white rice is much better than brown rice, in this dish, anyway. .I tried the brown rice, it was alright, but whice rice is much better, also, I once tried it on a bed of mash potatoes, with a small salad, sliced tomato and Boston lettuce, with fresh lime juice...Man, I'm making myself hungry. I have never tried bottle lime juice, I wonder how it taste?

  • @418sadeyes I made the dish with white rice too. I like both white and brown, but white is what I buy the most and all I had yesterday. And you know what I also incorporated potatoes to the meal, not mashedm but boiled and I did salad too simple though. Just spinach and tomatoe. Over all my husband said it was a king's feast. He says that everytime I make an effor on making more than one course meal. lol.

  • @418sadeyes To answer to your question I do have bottled lime juice at home but honestly I'd always rather use real limes for salad or on meals. Bottled lemon or lime juice is good for lemonade though, real good.

  • @hsagal04 I once tasted it bout 10 yrs ago, and it was horrible. It tasted coppery. So, like you, I always use real limes & lemons. Have you ever tried lime juice on tomatoes, cumcumbers and thinly sliced celery and onions or finely chopped all of the above, and put on the really chilled lime juice? Man, it smells so clean!! This is really great. I will try it bottled lime juice for lime-aide this week-end and try it. It is hot enought, as they say, to fry an egg on the sidewalk.

  • I love Chef John's recipes, I've done three in the past few weeks, and I've gotten very good results. Also, his humor is one of the reasons that I've watched almost all of his videos, (still catching up; so many!). Even though I love his videos, I don't usually comment on his videos, but, I couldn't resist, I have to say, that his "... throw it up on some rice" commentary was hilarious.

  • the flour to make the liquid thicker should be added with a little of cold water. because adding the flour as it is (dry), with the heat, the forms little "balls" (very small ones), hence making it harder to spread evenly onto the food.

  • If you think this looks good. Check out his braised porchinni short ribs. I must have made that for friends about 4 times. I followed his recepie as close as he discribed it. My friends think I went to culinary school. It was that good and very easy to make.

  • @derektte Hey now, lol. I'm Muslim, and now you're probably wondering why I'm watching this video (well I'm southern and I was planning on using the same recipe but with lamb chops instead lol). But, I'm use to seeing these dishes because my mom's side of the fam is Christian and southern (from Mississippi). My mom always said the pork might not be good for you, but it sure use to taste good and still smells good, haha.

    It's a type of milk you get in the store, it's *not* cream. However it should be in the same area of the store as the regular "Sweet" milk and cream. It'll say " Butter Milk" on the front.

  • Buttermilk is basically milk that has been lightly fermented by bacteria. The bacteria give off lactic acid, giving the milk a slight sour taste. It is also thicker than milk, but not as much as cream. You can find it in any store, really.
