  • @begokk Old Bay seasoning is a seafood seasoning. but it can be used in any recipe that you wanna use it in. i have used it to make fried chicken. and it was great. i have a recipe for a Cajun spice if you want me to send it to you in a message.

  • @sephspike thanks for the info! I managed to find it at Wal-mart, it tastes pretty good. Cajun spice will be nice, but i'm afraid I might not get all the ingredients.

  • This looked pretty good. Thanks for cooking the shrimp right, people tend to cook shrimp like its chicken or somthing then it turns to rubber. You had too much liquid tho. you made a red jambalya which is what I like, has the tomatoes in it yum!

  • Thanks, this video was great! I'm going to cook jambalaya for the first time this weekend, hope it works out. I was thinking of putting a cup of wine in with the chicken broth, can you do that?

  • You know? I'm so lucky I live in an area of Italy where someone had the great idea to bring into our streams some Louisiana sweet water shrimps... :) I'm gonna try it. Can I use fresh sausage or better if I use German wrustel?

  • @aliceihm I think either way it would be good. The sausage I use is smoked, it gives it a little smoke flavor.

  • @LauraBeachnut Sure you can use fish seasoning. Check the ingredients with old bay: CELERY SALT (SALT, CELERY SEED), SPICES (INCLUDING MUSTARD, RED PEPPER, BLACK PEPPER, BAY [LAUREL] LEAVES, CLOVES, ALLSPICE [PIMENTO], GINGER, MACE, CARDAMOM, CINNAMON) AND PAPRIKA.

  • i used this to make my own vegetarian version because my sibling is vegetarian. I live in malaysia and sausage like that is crazy expensive.

  • here's a tip: with brown rice if you wash it an soak for an hour or two ahead, You can half the cooking time and the rice isn't as hard.

  • Dave, sorry to bother here... I'm still quite the beginner. In fact, I've never cooked with shrimp at all. Are those shrimp you put in pre-cooked? Surely you have to cook shrimp longer than 5 minutes for them to be safe to eat? Thanks in advance for your answer!!! I love watching you cook!!! I've cooked your chicken hash and it was wonderful! I've also just put into the oven a dutch oven full of your baked beans!!! Next, I hope to try the jambalaya. Dave, you are my favorite!!!

  • No bother my brother! Yes, the shrimp cooks quick. If you cook it too long it gets rubbery.  As soon as the shrimp turn pink, they are done. It only takes about three minutes in rapid boiling water to cook shrimp.

    Put some mustard in some water and give it a try. Just a spoonful of mustard to a couple of quarts of water. When the shrimp turn pink, take them out, eat them and see what you think?!

  • @jamesterry1977 No sweetie, the shrimp he used were raw, and thawed out. No it doesnt take more than a few minutes to cook shrimp. Basically once it turns pink, its done.

  • @ojfraz if yeen got old bay season just use the trusty stuff of Louisiana cookers use and that's salt, red, black, and white pepper. A teaspoon each of the peppers and 2 of the salt.

    Dave, every time you show the inside of your Dutch Oven, it's always so shiny and seasoned, even after you've cooked Jambalaya and dishes that usually remove everything but the iron. How do you keep it seasoned so well?

  • Ok heres what I used. Its called Tony Chachere's Creole Seasoning. Not sure how close it is but this is the second time Ive made this and its incredible. I throw a little flour in at the end to thicken it up. I highly recommend this recipe.

  • Cant find 'Old Bay" Seasoning in Hawaii. Any other acceptable substitutes?

  • @wildernessjunkie Look for celery salt, that's the main ingredient along with mustard, red pepper, black pepper, bay leaves, cloves, allspice, ginger, mace, cardamom, cinnamon and paprika. You can basically make your own.

  • Made my first jambalaya with this. It's an excellent dish and you kept the instructions simple and straightforward! I don't think I would have tried making the dish otherwise.

  • Oh, and let me share a Baltimore Old Bay secret.. to get more out of the metal box without actually pouring it, you can squeeze the sides of the box so they "click" back and forth, instead of shaking, and the seasoning will flow a bit faster than being shaken, but not as fast an being poured.

  • 5 Stars for the Old Bay!! I'm from Bawwldamoe so it's nice to see out of towners using our stuff!

    Diggin' these vids man, good stuff. I'm also a big fan of cast iron pots/pans. They cook even and last forever. Also you don't mention it, but having everything cut evenly as you do is important, to ensure that everything cooks at the same rate. Great work~!

  • Yes I do? It began in the crib with the settles in the new world. They used tomatoes instead of safron when they made they Spanish dish called Paella. This is not a canjun dish, it is creole.
