Looks delicious! I soak the pork shoulder in apple juice and onions for at least 24 hours before cooking to give it more flavor. Sprinkle on my own dry rub made from nearly every spice and herb I have. Then I use a Cookshack electric smoker oven for 17 hours with apple wood for the smoking. @acdcgreat i know this is a little late, but venison, if its the same cut, or any cut that does a large amount of work and has a good amount of connective tissue in it u can cook LIKE this. but venison has a much darker meat and a really gamey flavour profile so id switch up the flavours a bit and make it not as sweet.

All my recipes are marinades of some sort. If you want to get the most out of the recipe you should use the five spice treatment (salt, pepper, onion powder, garlic powder, and Italian seasoning) and marinade overnight in the frig.
For a cook I am really surprised you don't cook with gas. The only people I know that use electric stoves, never really use them. Great vid anyway, I'm going to make this on the weekend

No, you do not need any extra liquid. The roasy has enough. If you cook it slow it will not scorch. If you cook it until just grease is left, call it done, chip it up, drain grease and add bbq sauce.

It is wonderful. The strawberries seem to help out the salt flavor. I did not think it would work untill I ate it. I tell you that there is never any leftover when I cook it.

He took out the grease and then put back in the cooking liquid. he didn't put back in any grease because he skimmed it off the top of the cooking liquid because fat floats above water.
I tried to elimate all the grease. Of course there was still a little grease, but mostly it was the juice from the roast along with the garlic and goodness.

They are both great! I think I prefer the loin roast (boneless), because it has less fat and the fat is also easier to trim off before cooking.

I just let it settle and tehn pour the grease off, or skim it off the top. Grease floats.
