  • @acdcgreat i know this is a little late, but venison, if its the same cut, or any cut that does a large amount of work and has a good amount of connective tissue in it u can cook LIKE this. but venison has a much darker meat and a really gamey flavour profile so id switch up the flavours a bit and make it not as sweet.

  • They are both great! I think I prefer the loin roast (boneless), because it has less fat and the fat is also easier to trim off before cooking.

  • This looks amazing! I love the strawberries idea. I like to put onions on my pork so as it roasts it caramelizes the onions and makes it have so much flavor check it out!!

    I just let it settle and tehn pour the grease off, or skim it off the top. Grease floats.

  • yes thanx dave i will put a vidio up about me and my dad cooking the rabbit stew well we are always cooking and i just made a samon and crém fresh and lemon sourse and it was delish i added a few herdbs like mint , dill , basil , mixed herbs and tyme and it was lovly so i hope to post a vidio soon and i will message you wen i do

  • thanx dave for the feed back and i like that you tell us its a original resipe but people nowadays look down on rabbit and squrille so i will folow your tips and adapt it to a meat of my choise.also would you ever consider cooking with monk fish?

    because its realy nice but a little bit exspensiv but it might be on the discount section on the fish counter.

    also will you do a marranading vidio or do you have one?

  • Hey Max,  thats cool I would like to see your squirell and rabbit stew?

    I dont think I have access to monk fish?

    All my recipes are marinades of some sort. If you want to get the most out of the recipe you should use the five spice treatment (salt, pepper, onion powder, garlic powder, and Italian seasoning) and marinade overnight in the frig.

  • For a cook I am really surprised you don't cook with gas. The only people I know that use electric stoves, never really use them. Great vid anyway, I'm going to make this on the weekend

    A good chef can cook on any heat source be it fire, sterno, electric or gas. Gas is nice but hardly is it any type of necessity.

  • hi dave im 13 and id like to say well dun on your cooking its been a big part of my famali from hunting a animal to sking it and cooking it and you have inspired me to use strawberrys with pork. iv been cooking for a long time and i like your techniqes what i like as you bung it in and use your mind to messure and thats how i cook

  • I think it would work with any meat that is slow roasted. I am making a brunswick stew soon that was originally cooked with squirrel and rabit. I am going to use pork and chicken. I will have it on youtube next week!

  • Dave, did you ever have to add any additional liquid in the beginning? If not, when it was simmering for that 2 hours, what kept the liquid from evaporating? I've never made a pork roast in my life, but I LOVE it and now I'm going to try one. Thanks.

  • No, you do not need any extra liquid. The roasy has enough. If you cook it slow it will not scorch. If you cook it until just grease is left, call it done, chip it up, drain grease and add bbq sauce.

  • It is wonderful. The strawberries seem to help out the salt flavor. I did not think it would work untill I ate it. I tell you that there is never any leftover when I cook it.

  • Hey man, I don't get why you took the grease out then put it back in, can anybody explain to me? I don't know much about cooking.

  • He took out the grease and then put back in the cooking liquid. he didn't put back in any grease because he skimmed it off the top of the cooking liquid because fat floats above water.

  • I tried to elimate all the grease. Of course there was still a little grease, but mostly it was the juice from the roast along with the garlic and goodness.

  • You should try them in salad greens (if you like salad, that is). You can use regular ol' dressing or a vinaigrette. It's sooo good.
