@UltiYoshi The program you see in the video is Synthesia (basically Guitar Hero's practice mode for piano), running a MIDI file. A lot of the programs you can use to make sheet music (e.g. MuseScore, Sibelius) can export sheets as MIDI's, and that's where these MIDI's come from.
