The sausages should never be cut in half in the first place..
When you cut a sausage in half, you're cooking the inner meat unevenly, when its still in the skin lining its keeps the flavor in and cooks proportionately!
ALSO..You didn't even add the bare bone ingredient- Salt and Pepper! HOLY F@$K!
NOW @ 3:16 its NOT BROWNED-- ITS BURNT! Because you burnt the GARLIC!
It had FAILED written everywhere when he introduced ONION POWDER! SMH! Im not even a chef.

@davedetrick jesus i cant believe people actually like this....its full of dried, canned garbage ingredients....the garlic was burned to shit and the wine was of the lowest quality...what a shame to italian cooking
first put in the butter, then cook the minced onion & chicken, then pour in some water after the chicken & onion has cooked, stir for awhile, then add the tomato juice or tomato paste & stir alittle, later add in the tomato sos, oregano, basil leaf, crushed black pepper, salt & stir well
Jesus Christ, that looks disgusting. Guys, just because this guy is a cook doesn't mean he can cook!! The only cook to thrust is your inner cook. Trying to imitate a 'pro' always leads to failure...
"Whoever doesn't put meat, you might as well just crack open a thing of sauce and use that." Why do I need to use meat? Can't I just cook it however I want to? I don't think I should need to in order to follow this recipe?

Cooking the sausage like that is a big no no. The sausage gets sealed and doesn't get a chance to absorb the sauce. Should have put it in raw and left the sauce on a low heat for a long time. That's just the beginning of how horrible that sauce was... please don't try and cook my people's food it's insulting.
@Baumholder6961 First of all I am 100% Italian. So YOUR PEOPLE is also MY PEOPLE. Now as for your take on flavor not getting into the sauce, your absolutely wrong. In fact all the flavor is in the oil after browning. Then that goes into the sauce. Your way is not written in stone. Please don't act like your the now all. It insults OUR PEOPLE.

man, that does look good. i'll have to try it. is the sweet italian sausage your favorite to cook with and is there any other particular meat you think works well with this recipe??
@jestrrr101 I like sweet and hot italian sausage. I also like to do chicken in the sauce. Brown it just like you did the sausage. It gives it a whole new flavor.

@purplegrl30 Usually you can find it at any Safeway. You live in the US and I live in Canada, so it could be different there, but you should find something along those lines.
@purplegrl30 You can buy cooking wine, in the grocery store; just ask a worker where it is. But I don't know how it will taste in pasta sauce. I only cook with wine that I would drink.
@purplegrl30 No no kid, they are making fun of you by now... You have been answered a few times already. THE ALCOHOL WILL COOK OFF. YOU REALLY DON'T NEED TO WORRY ABOUT IT YOU CAN'T BUY THE WINE ANYWAYS! GO ASK YOUR MOTHER!!!
love your passion and i dont mean to sound rude but american cooking (especially Italian) IS SO LAZY!!!!!!! powders, gimmicks, rapidly...wheres the fresh herbs? wheres the quality wine, meat and cheese? if you make some minor adjustments your dishes will improve ten fold!
@mikedelpiero9 Your absolutely right. I have to keep something in mind. Fresh herbs go to waste. You always throw them out and that is wasted money. You never use them all. So the dried herbs are just as good especially since people are in a rush to cook and they are always on hand. The reason why people don't do recipes from TV is that they don't have 1/2 of what the guy is using in the cupboard.
@jakatak69 i disagree....its not a huge hassle to grab fresh ingredients from the market when your making your "specialty" dishes...and you can always freeze them and use them next time. frozen herbs, cheese, meats > dried herbs, processed cheese and mediocre quality meats anyday and its not THAT much of a monetary difference.
@jakatak69 yeah, you can't really freeze anything that has water in it, such as leafy vegetables or herbs. I think this guy is just trolling on America.
@DragnSly not true, I try to use only fresh herbs, but I hate wasting. So, If I have left over herbs and I'm not going to use them, I freeze them, and then only use them for soups and it's still better than dried herbs
it isn't Italian food, i have never seen a kind like this. The basic spaghetti are only pasta, passato di pomodoro ,basilico e formaggio grattuggiato. OK about wine in the meat but better is vermouth ( white or red ), or Marsala wine .
i like to cut the sausage long ways and short ways also, it gets the inside better plus it makes nice bite sized pieces and makes it seem like more meat is through out the whole sauce
@christang07 make sure you don't over cook the deer meat. some meats get tough when cooked too long. Maybe brown the meat then simmer the rest of the way in the sauce.
@sjpike23 yes. use a little more burgundy or merlot in with the meat after browning, but before adding puree and crushed tomatoes. let the meat simmer in the wine and cook in the wine. This also removes the alcohol.
Another thing you can do is add red pepper flakes for heat. Give it a little kick and that balances any sweetness they might taste.
Another thing that also works is changing the meat to chicken. Chicken adds a whole other flavor profile. Very good. I promise.
@sjpike23 it's weird that they say it's sweet. We don't add sugar to the sauce. Another suggestion is season a little heavier. Those seasonings need to kick in and be the main flavor of the sauce.
@cccchhhhable My son is a food technition and showed me this one a few years ago. I was making bolognaise sauce with beef and he said "you have got it all wrong" Use only pork mince or a blend of 50/50 pork and beef.
Give it a try and just use the normal other stuff - garlic, oregano, onion, tomato paste
and tomato pulp - you will really notice a differency with the pork.
@WreckeDp0seid0n just leave it out. Remember that alcohol cooks off so there is no alcohol by the time you serve the meal. it evaporates from the heat.
heya jack. i would like to make this sauce to the lazy man's lazagna, but i got a vegetarian sister, so you recomendo go buy a can of sauce or do you got any advice to make it without the meat?
@XTheXDrumerX mix the same stuff without meat. Just simmer until the seasonings meld into the sauce. You should taste it and it should still be great.
its not even decent

it isn't Italian food, i have never seen a kind like this. The basic spaghetti are only pasta, passato di pomodoro ,basilico e formaggio grattuggiato. OK about wine in the meat but better is vermouth ( white or red ), or Marsala wine .

Is there anything I can substitute the wine with? I don't cook with Alcohol. Thanks a bunch :)
Lynnphotos84 1 year ago
@Lynnphotos84 just leave it out. it will be fine. Alcohol cooks out so you can't get drunk off it.

i like to cut the sausage long ways and short ways also, it gets the inside better plus it makes nice bite sized pieces and makes it seem like more meat is through out the whole sauce

I am putting deer meat in with mine...would I do anything differently?
christang07 1 year ago
@christang07 make sure you don't over cook the deer meat. some meats get tough when cooked too long. Maybe brown the meat then simmer the rest of the way in the sauce.

You really should have used Minced beef and fresh onion and garlic. The extra effort is worth it.

Jack, i like your recipe but my kids say the sauce tastes alittle sweet. I am using a pound of ground beef instead of sausage.. any advice ???
sjpike23 1 year ago
@sjpike23 yes. use a little more burgundy or merlot in with the meat after browning, but before adding puree and crushed tomatoes. let the meat simmer in the wine and cook in the wine. This also removes the alcohol.
Another thing you can do is add red pepper flakes for heat. Give it a little kick and that balances any sweetness they might taste.
Another thing that also works is changing the meat to chicken. Chicken adds a whole other flavor profile. Very good. I promise.
jakatak69 1 year ago
@sjpike23 it's weird that they say it's sweet. We don't add sugar to the sauce. Another suggestion is season a little heavier. Those seasonings need to kick in and be the main flavor of the sauce.

@leaper1950 hmmm i'll give it a try next time i have some spaghetti but i use beef mince
cccchhhhable 1 year ago
@cccchhhhable My son is a food technition and showed me this one a few years ago. I was making bolognaise sauce with beef and he said "you have got it all wrong" Use only pork mince or a blend of 50/50 pork and beef.
Give it a try and just use the normal other stuff - garlic, oregano, onion, tomato paste
and tomato pulp - you will really notice a differency with the pork.

what else can i use to replace the wine?
WreckeDp0seid0n 1 year ago
@WreckeDp0seid0n PORT!
leaper1950 1 year ago
@WreckeDp0seid0n just leave it out. Remember that alcohol cooks off so there is no alcohol by the time you serve the meal. it evaporates from the heat.

heya jack. i would like to make this sauce to the lazy man's lazagna, but i got a vegetarian sister, so you recomendo go buy a can of sauce or do you got any advice to make it without the meat?
Angelo ;D
XTheXDrumerX 1 year ago
@XTheXDrumerX mix the same stuff without meat. Just simmer until the seasonings meld into the sauce. You should taste it and it should still be great.
