Make sure you skip a string so you're playing the A the G and the B string, i've covered this with my band, sounds perfect. Idk what your problem is...

lighlty lay your index finger over the D string when you are forming the chord and that should mute it.

Emm... Good Riddance/Time of your life would be easy enough. It uses basic enough chords. For punk rock, you'd be using Power Chords which might be a bit difficult. If you are considering on trying, I'd recommend All the Small Things or Smells like Teen Spirit, that should get you started on power chords.
