You can only play as her human form in varying attires. It would have been cool to play as her monster form though.

I have an x-box. This game is so cool. I didn't wanna go through this slightly to unlock wei-lu so I used a cheat. This game's REALLY hard and frustrating but its cool and awsome

Sadly it's very unlikely that a sequel is going to be made. It's at least 6 years since the first came out, so the chances are now pretty slim.
