with lats i found it was most important to just feel the muscle... find a chair, barbell or whatever that is below chest height and, with both hands palm down, press down on it (arms extended) you will feel your lats engage.. also, remember that in order to flair your lats, your traps have to be down.... Once you figure those two things out, you can actually use your torso as a sort of brace and "pull" your lats out to their widest point... similar point to be made when you do a rear double.
