this is another fantastic video. though the last time I made foccacia on a bare pan it stuck to the pan like glue and I had to seriously scrape and scratched the pan. I oiled the pan, but maybe not enough? I now use parchment everytime, because of this.
Well it looks gorgeous, and pretty much certainly tastes gorgeous too, but no-one outside Liguria really makes focaccia. The real thing is just like nothing else.
Funny when I got to Berlin one of the first things I did was to talk proper high German, only to be told later that the Germans love it when somebody has a Swiss accent...d'oh ;-)
Thanks for adding me to the subscription list. I LOVE focaccia. In fact, I have to get off line. I need to go try this. I have your book (autographed!) with the recipe in it, and you just make it look so easy. I know better, but I'm going to go try it anyway!

Chef Hitz, I honestly just recognized the Swiss accent because at school I didnt notice it too much when you spoke..
