  • fyi, sealing in the juices is a myth.

    What you want is to brown to cause a maillard reaction for flavor.

    Sealing in the juices is just bad teaching handed down through the last 2 generations.

  • Hi Pissa2, watch our video "ieat learns to cook Miso Soup". At 1.53, there is a closeup of the Dashi stock that we use. It's an instant mix that chef Tom swears by. If you are in Singapore, you can get the stock at Meidia-ya supermarket at Liang Court.
