First Dough rest will take about 60 75 minutes after the first dough rest kneed (mix) the dough again for about 30 seconds
Mix the yeast and water together in a bowl big enough for all of the ingredients. Let stand for maybe 10-15 minutes..This will activate the yeastIt will get a little bit foamy. You can add a pinch of sugar if you like this will help the process.
Chicago Deep-Dish is my favorite incarnation of pizza on the planet. I have an idea for a cheesesteak renidition of this pizza, which you grill some steak or chicken w/ peppers and onions (and/or some mushrooms and/or some cherry peppers, if desired) and use all of that instead of the typical pepperoni and/or sausage that usually is in Chicago Deep-Dish Pizza.
