Just piping in a bit, we have some good Beer Festivals in Lancashire, I don't go now but remember that they were pretty well attended. Some good. , small Pennine Breweries make quality ales.
I will throw up my recipe and make a vid...my recipe is probably not authentic either...but my best friend and I went to a hockey game recently, we purchased one of those large soft pretzels, and I was immediately told "Immo, your pretzels are so much better"..it was nice to hear..so I'll have to share it with YouTube
@TheSarge303 Can't say I'd single out one beer and I assume we're talking about commercial beer, but I'm quite fond of the beers from the St Germain Brewery in France, Page 24 Blanche is a superb beer, it inspired me to make my white beer. One of my favourites is a good session beer: Hancocks HB. Possibly, in no small part, due to nostalgia from drinking it in the Ferry Inn in Pembroke Dock, several Landlords ago. As for beer Festivals, I've not been to enough to say where the best ones are.
@immolateus To be honest with you, I don't know how authentic the recipe is that I followed, but the result was enjoyable. Be careful how long you dip the dough for. It's very easy for the dough to break up.
I've since had some advice to get the outside tougher. One approach is to use lye (sodium hydroxide) instead of bicarb. The other is to rest the pretzels in the fridge before baking. I'll have to try them out. Just need to find food grade lye.

@immolateus I think 40g of sugar is about 3 tablespoons. It did seem quite a lot to me, but I guess it was off-set by the saltiness of the coating.
