Did he even season/seal the beef before putting it in the pastry? I really don't like the "tower" thing he's got going on. This guy is just full of himself. Thinks he's some kind of master just because he owns a shabby restaurant. TERRIBLE presentation, I wouldn't pay for that.
The comments on here are from complete assholes. I prefer peasant dishes myself but I liked the single serve creativity and I bet its damn delicious. Again, what a bunch of asshole comments. They can go home and cook up their ramon noodles and tv dinners, hopefully to choke on a pre-baked brownie.

He added the mushroom duxelles at 0:46. And foie gras is a classic ingredient in Wellington. But spinich is a new one on me. And 7 minutes? I know it was a small piece of beef, but 7 minutes isn't long enough to cook the pastry. (Remember, the beef inside and all the other ingredients are cold.)
I agree with everything you say. But to his credit, there IS supposed to be a liver component in the mushroom duxelle. That was the foi gras. And when he said duxelle....YOU should have known that that means it is a mushroom mixture. That is...if YOU are a chef yourself.
The spinach is def wrong and the shape is horribly wrong.

Huh? Dude, it's sauteed spinach (garlic, pepper, salt, fat.) You know how to prepare rare red meat don't you? Salt / pepper and sear! Same with the foie gras. Connor made a video for his duxelles, or you can copy another recipe. Simple. And you just bake it until the pastry looks nice. How much more info do you require?

i only said last time you should use a board because us real chefs all do.
we use pastry brushes instead of fat sausage fingers too.
and i'd maybe consider decorating and egg washing the "presentation" side of the wellington.
