I am no "animal rights" fundie - you should see the kinds of things I say about people like PETA - but doing all this to the fish while it is still alive makes me somewhat uneasy. Yes, it is stunned. Yes, it is a nonsentient being and thus its suffering pales to that which would be experienced by a human or a dolphin in that situation. But it still does experience that surely-excruciating pain.

Coupling that with the inherent risk to this food, I would recommend ceasing the practice altogether.
