There are some sites like manjula'skitchen.com or the videos uploaded in youtube by them they even don't allow people to add comment which states some disliking or suggestions. you can also make tiny slices in the eggplant to stuff the garlic and a lot of fresh chillie peppers in it. Sprinkle with a bit salt en wrap it in foil. Heat it above a flame on one of your pits and let it burn til it becomes very soft. Open your foil, mash the whole thing with some tiny sliced fresh raw onions together and you have yourself a nice hot en spicy simple roasted eggplant chutney.
I follow a satvic diet and use asafoetida as an onion/garlic substitute. if you cook with all three a bottle of asafoetida must last a million years!! :-p

I use to make this recipe on my own.When i came to US i found brinjal cannot be cooked on flame as in our conventional style indian cooking so i roasted it in the oven and it tasted just the same.Felt so good that showmwthecurry has put up a video on it... i feel am a gr8 cook
No, poking the eggplant is not necessary and it'll prevent the juices from flowing out. Guess it could be a different version of baba ganoush. It can be eaten with chapati or paratha or rice, though it is not very "saucy".
Do people in India (and other 'hot' countries) actually heat up the oven to make such dishes? Is there any alternative ways to cook the eggplant? I think something is living in my oven. If I open the door and stare in for a few minutes, I could swear I see something moving.

I add tomatoes to my eggplant subzie. I don't use lemon juice or asofatida. I will try your recipe tomorrow.

in Trinidad we call this baigan choka. But we put the onions raw and roast the peppers and garlic with the baigan.

Thats how the Fijian Indians also cook the Baigan and we also call it Baigan Choka.
