at my butcher shop i never throw away the feet,theres foody people out there that love exotic cuts of meat and feet are deffently one at $1.79 a pound you cant throw away money.That gose for the hearts which the market for is set out at 2.45 a pound, the livers dont get thrown away either at .89 cents pound. I save the gizzards for me just because theres not enough that come off the chickens i rais to sell as a quantity

So the reason you pull off the head instead of cut off the head is to be able to pull out the craw? Why not just cut it out? I am new at learning this. Thank you for showing this!
Thanks Mugsy. That was a big lesson for us after using flat-sided cones for so many years - no struggling chickens in the round ones. Gentle handling helps too.
