Water in the pan is a heat buffer & a waste of fuel. It helps hold the temp down low. If you can control the temp without it just put sand in it, covered with foil. Ask the same question at BBQ central...

Gas is ok if you have a way to add real wood smoke, (pan over a burner ect...)
But don't boil em. Pork spare ribs will take about 4 to 5 Hours @ 275 to 300 deg.
Baby backs about 3 to 4 hours.
I should have mentioned never marinate pork in a salt solution. The meat will taste hammy. Simply use a dry rub & sauce ONLY in the last 30 min's or less. Yall should also turn down the heat to 225 after saucing

I use S&P on burgers & steaks,
on pork & chicken I use Wolfe rub which is kinda like KC Masterpiece BBQ Seasoning. KC aint as sweet so add some tubanado suger to it
