Hi Tonyw1988, If you pause this video at 0:08, you will see how far back the elbow comes. There are action photos on the volleyballform site that show how far back the arm/elbow can come before contacting the ball. Check it out.
Is this purely focusing on the snap? You don't seem to bring your elbow very high to incorporate the shoulder and the elbow. Otherwise, that's a strong wrist snap. Very nice.
Try doing wrist curls to get used to the motion and to strengthen your forearm. Sit with your wrist lined up at the edge of your knee and a weight in your hand. Lower the weight down and curl up. Also, you can think about wrapping your index finger and thumb around the top side of the ball. This will help you to snap. If you have a video of your snap, I can help you further.
Yes, you should absolutely continue to snap your wrist when you hit. Not only will the ball go down hard, but you'll be able to change the direction of the ball with your wrist snap depending on where you see the block and the defense while in the air. A quick wrist snap is integral to hitting. Wrist curls with weights will help improve your snap. My video camera broke, but I'll be creating new videos to help work on this skill soon.

You might be taking the ball behind your head. Try contacting the ball in front of your body so you can snap on top of it from behind.
