Forget to let it stand for 3-5 mins after cooking. This will give you a much more juicy steak. Just let it stand with some aluminum foi over it. Otherwise, I don't like the colour of the steak the way it is cook here. But hey, that's me :)

If the steak is thick, put a clean house brick triple-wrapped in foil on top to press the steak firmly to the pan, and flip once. If the pan is ribbed, turning the steak 90° once on each side before flipping makes for an X-style trellis effect as the steak cooks, very impressive presentation-wise. With the brick method, a high pan heat means that it gives you a well-seared caramelized steak on the outside and a juicy medium rare steak on the inside. You do not eat the house brick, by the way :-)
@RoarSporkRoar12 I did not make the video, but I have put extra virgin oil on my steak at the end. It's a popular thing to do in Italian cooking, and that's because yes, it tastes good! Very good! Fat transfers meat flavor, and a drizzle of nice tasting olive oil makes every bite that much more rich and delicious.

I disagree with what he said in the video about turning the steak every 2 or 3 minutes. You should turn a steak only once, maybe twice, and then on its side to cook the fat. If I were cooking this steak, instead of drizzling olive oil on it at the end, I'd use a tbsp of salted butter, reduce it while cooking the fat side, remove the steak and let it rest and take a tbsp of the melted butter and drizzle it again on the top. I recently saw chef Robert Irvine take a pad of butter and let it melt on the steak,, then top it with the melted butter from the pan as it was resting, and I had to try it. Came out great. Never use olive to cook a steak because the flash point is to low(veg, canola oil instead). Second, only pepper a steak at the end as the pepper will burn when cooked in hot oil.

I thought the same about flipping once, but I read some research, and it turns out that flipping often results in a more even center, with less overcooked area near the outside. Google "Kenji Alt burger flipping", and see the burger lab article. Same applies to steak.
@CosmicDamian this tho only regards to optics. the steak wont be as juicy and perfectly cooked as when you let the steak come to room temperature for at least an hour before cooking it and thne do the usual one flip cooking.

@CosmicDamian lol i dont need research for that. i used to cook steaks fliping multiple times, its just not as juicy and tender. besides, how long do you take to pan fry a steak? if u let the pan get as hot as possible and then start cooking, it pretty much takes 1 minute per side to be done on the surface whit a nice dark crust. how often do u want to flip the steak in that short timespan? (pbviously i put the steak into the oven afterwards at low temp until its med-rare)

@carswell98 agree, but I only flip the steak multiple times if it is thick. The most important part is to buy good quality and hopefully well matured? beef, and some parts are a bit more tricky to get right than others.

I just tried this method, and my steak was excellent. I am pretty good at cooking chicken and fish, but had never really gotten into cooking steaks but this video helped me make a surprisingly good rare steak. With a side of diced avocado and tomatoes, my dinner tonight was great.

@cbpointblank I've tried this method and it works. I'm from Texas and everyone has to grill their steak after marinating for 3 years. I like to go to the store, buy a steak and cook it that night and this method works and it is just as good or better than the grilled steak.

@cbpointblank Turns out flipping a steak multiple times is fine, and he only pressed very lightly. You can test it out for yourself, flip multiple times and see that it comes out just as good or better.

@KloptoriouS Lol are you mad kid? What's being American have to do with killing a perfectly good steak? Olive oil is not the problem either... although it is actually easier to use high smoking point oils like Cannola that way you can use a really hot pan for the sear.
Anyway the problem is his technique. First off he's cooking a big steak only pan sear and flipping it every minute? Why? For a home cook searing both sides quickly and finish in oven is almost always gonna be best.

I just tried this method, and my steak was excellent. I am pretty good at cooking chicken and fish, but had never really gotten into cooking steaks but this video helped me make a surprisingly good rare steak. With a side of diced avocado and tomatoes, my dinner tonight was great.

Too much oil on the steak for my liking. My meat hits only a grill...never a pan...preferably over mesquite or hickory wood. Slight salt and pepper.

Gordon Ramsay says the exact opposite of Jamie. He says only turn ONCE and if I seriously cooked a steak for 8 minutes regardless of size I can put money it would probably be Very WELL DONE. Or dried out at that point. Goodness me.

no way a steak that thick requires 8 mins cooking time, it would be burned to a crisp! I would have given that steak a maximum of 1.5 mins per side for medium rare or 2 mins per side for medium

@08hamster turning it constantly makes it cook more evenly. the only thing that bothered me is that the oil on the pan and not on the steak would have created a better sear
