its just spinal reflexes. the reason we can do other things when walking is because are "stepping" is a reflex, doesn't require much brain input unless we have to change the pattern of walking. In fact, if the head isn't cut off properly, leaving the "brainstem" part of the brain behind, the chicken might be able to live for quite a while. The brainstem controls most of the things we need to essentially live like breathing, heart rate, and other regulatory controls.
