I haven't read about Jambavan during samudra manthan. But he did re-surface in the dwapar yuga - when he was defeated in a wrestling duel with Krishna when his son was frightened by Krishna snatching the swayamtaka muni from him, and he gave his daughter Jambavati in marriage to Krishna...

Balaram bailed him out after a confrontation with the Kauravas, who then relented and gave her in marriage to him, and it was that marriage that formed the basis of Duryodhan's claim to Krishna's support...
...Samba himself was later cross dressed and shown pregnant in front of docile Rishis like Durvasha, Vishwamitra and Kanva by mischievious Yadavs who asked the gender of his 'offspring'. The merciful Rishis cursed him that he'd deliver a mace which would destroy the Yadavas. The rest is history.
On your other question, the Ramayan is both. Being an account of Lord Vishnu's 7th avatar, it's religious, and at the same time, it provides a lot of info on Aryavarta in ~5000BC
@humbleRaj yes he was present. And so was Vali according to another story concocted by Sugriv to Rama. Jambavan helped the gods and in return the gods gave him the knowledge of the medicinal herbs which would one day be of use to Rama in restoring his brother's life. As for Vali, it is said that Vali was strong enough to spin the mountain himself in the ocean which the devas and asuras combined couldnt do. The apsara who came out of the ocean, named Tara, she married Vali.

Does the new version have the shrap on Nal and Neel, who were Naughty as kids and once threw A Rishi's belongings into water.
The Rishi though Furious came down after seeing two cute baby monkeys and but stil curses them that whatever, they throw in water doesnt get drowned
