There are actual turkey lifting forks - you need two and they have very wide tines or teeth. They insert into the lower side of the turkey and makes it easy to lift. If you don't want to buy a special tool, heavy twine works as well. Loop two pieces beneath the bird and make a sling to lift it up. To keep the bird from sticking to the rack, I insert slices off lemon between the meat and the metal so the turkey is resting on the lemon slice.
how do you get the turkey off the roasting rack? Mine either sticks to the rack or tears up when I'm trying to get it off the rack then its in pieces.It's too hot to handle to pick it up with my hands so try putting a big spoon in either end and it falls apart! HELP!!
try preheating the pan and the rack in the oven when you preheat the oven, then take out when you are ready to bake the bird and place it on the hot rack. hot pans keep things from sticking.... i would think that a hot rack would do the same. good luck. or try oiling the rack first. OR take the hole rack and carve it on the rack at table...
This is a really shitty tutorial. Why are they using Virgin oil ? why not put Butter to add flavor instead of using oil which is actually not as health and doesn't really add flavor to the turkey at all. This is bad...

I would use butter on the turkey skin and not all that salt and pepper! Way too much pepper! If I didn't stuff the turkey with a stuffing, then I would use onions and herbs to flavor the insides. This procedure she shows here is just the bare minimum.

I also stuff it with scallions and carrots and fresh parsley and put onions, carrots and celery at the bottom of the pan. I also put a butter/spice mixture under the skin, and use the pan drippings to help make the gravy.
I can't believe she only uses salt and pepper and then pops it in the oven? who cooks like that?If I cook meat it has to marinate at least over night.
