This can't be the game from the video in response. Sofia is white and wins and there are only a few pieces left, most likely rook vs rook pawn. Obviously doesn't resemble what you have here.

This is a standard opening for white called the Queen's Gambit. It is generally accepted that if black takes the gambit (ie the pawn) white will be able to take the pawn back and / or have a better and more developed position for the rest of the game.

It's called a gambit. A lot of openings for example, the queens gambit, kings gambit, elephant gambit etc. sacrifice a pawn in order to get rapid development with their pieces and launch a quick attack. They say a pawn is worth 3 tempos (moves)
