  • Sigh, i wish my favorite lake would let us keep 16"ers, strange rule at ours where we cant have any between 15"-18" then only one of them can be over 18". Anyway great vid now i understand how to get the bones out alot better

  • @sos60joker-- u leave the skin on so the fish can be identified by authorities to ensure u didn't exceed limits and what not. Sounds silly, but we got our fish confiscated by officials at the Canadian border one time. We left the skin on, but we had it on ice and it was frozen so they could not Id it. Really sucked.

  • Why do you leave a 1 inch piece of skin on the fish when you transport it? I assume its so the DNR can ID your fillets if you get checked.

  • There are a few things here that need to be added: When you take the skin off you must aim your knife a little bit towards the ground ( 20 degrees or something ), just enough to drag all the meat over your knife without piercing through the skin or else some meat is going to stick with the skin. Also with bigger walleyes ( 2 or 3lbs and higher ) you can take both face cheeks as well. And finally never operate on a naked wooden surface like this it is not sanitary and attracts animals afterwards.

  • how big is too big when it comes to eating walleye?, I've been catching 2ft+ walleye but have been throwing them back because they are usually all beaten up and have chunks missing out of em, plus I heard they werent good to eat if they're big.

  • I just caught my first walleye yesterday while crappie fishing. 18.5 inches and 2lb!

  • i like to 'zipper' mine. im from toledo and the walleye i keep are usually around the 20 inch range. just cut a slit on each side of that vein in the middle then pull one side off then the other and it helps get rid of any of the stronger "fishy" taste you find in bigger fish. good video

  • It was a truly great way to fillet a fish... up until I noticed how much of that fish went to waste... that little stripe rest of what was on the fish, all can be used very well.

  • I think my problem is never having a really sharp knife like you have here. Going through the back bones at the beginning is never as easy and smooth as it was for you here. And you make taking out those rib bones look so damn easy! I go slow and always end up taking out too much meat.

  • Just keep doing it! My first couple catfish I filleted, I butchered pretty good. Practice, practice, practice.

  • I've since figured out what really works best for me. I leave the skin on and then use a fork to remove the rib bones. The skin holds the fillet together so the rib bones can be ripped out easily. Then I take off the skin.

    I used to remove the skin and then do the rib bones last. But when the fillet is small, and the skin is gone, the fillet will just rip apart along the lateral line and you end up taking too much meat. So my tip for newbies, leave the skin on!

  • There's a good reason for keeping only the filets, especially in PA. The small section of meat near the Dorsel and closer to the belly of the Walleye, Saugeye, and Sauger are known to collect deposits of Mercury and PCBs, which is why it is reccomended to not eat those pieces of the fish. Though it may not have any immediate effects, prolonged exposure to mecury and PCB deposits in fish especially those who have a high fish diet, can cause severe health issues and birth defects.

  • Beautifully done!!! That's how I learned up in Canada. No wussy electric knives, no bones, just a good clean fillet. Fry it in cracker crumbs after dipping in egg until golden brown and you are done! Nothing any chef can make beats fresh Walleye.

  • Here's a little trick...On your next outting take along a empty coffee can filled with oil that you use to cook your fish...Place a corner of the can on an open fire and you now have a disposable deep fryer...Remember...The can is very thin so you should only have a tip of it in the flame..once you find the right temperture for the oil (325-350) your set..nothing better for a shore lunch..let can cool ..put lid on it and dispose of can..please remember to always take back what you brought.

  • dont filet these beautifull fish man. If you cannot accept that fish have some bones than dont eat it! Filet fish is throwing away alot of meat and thats a waste. Just eat around those bones and dont waste any meat , you wont die of getting a little bone in your mouth spoiled people! Just catch it , clean it and cut it in small or larger chunks than cook. Nothing wrong with that and better than those pathetic pieces of filet wich is wasting fish

  • I know someone who almost died from a fish bone that perforated his intestine...I'm almost certain that folks die on a regular basis from choking on fish bones as well...I am niether spoiled nor wastefull. I NEVER leave a bone in my fish unless someone makes a special request for bones(never happens in my experience). When given a choice, people always prefer boneless walleye, pike and perch.

    and datroof, one inch of skin should be kept to identify the type of fish, if you are crossing a boarder, to not let any forign fish into a country.
