Multiple strongholds CAN spawn per world, I've found five in my creative map, two in my survival map, and two in my hardcore map. *SPOILER, DONT READ THIS PART ANTVENOM!)

If you run Minecraft using the batch file that you can make, if you pay attention to it, it states something if you explore enough, once in a while, that, for example "Stronghold placed at *Blahblahblah*" so uhh, yeah. :D
