The "rhizome" is known as Krachai or Grachai or various spellings like that. It is available frozen or jarred in the US. Would recommend the frozen variety for best flavor.
you should try to mix this with korean bbq sauce...i tried it and it was really really good...tried it with beef and put it on the grill it was good...
Thanks missnget! Oh yes, this paste is very flavorable for beef kebobs/sticks, but just make sure that there's enough fat on the meat in order for it not to be dried up when grilled. Another option is to mix in some more of this paste with vegetable oil on the side to baste on the kebobs when cooking.
I got that idea from Rachel Ray, but instead of using a big bowl next to her, I use a grocery bag so that I can just throw it away instead of cleaning the bowl.

@klumzi Hi! The only difference was whether I put a lot of dried big chilis when I'm grinding it...I usually like mines red.
