The scriptures that we do have are copies of earlier ones, so we don't actually have any original scriptures. If the words were divinely inspired, how do we know the exact words? We have a translation of the translation of a copy. Many stories can be found in older religions; Egyptians, Sumerians, etc. Its hard to know....

That leaves plenty of time for God to create & observe chimps & other creatures (& their evolutionary process) until he decided to create humans.
