I have some concerns about this recipe. High heat for extra virgin olive oil? Even regular olive oil isn't suitable for high. Neither is butter. Second is more of a general question. Do you not taste the bitter rind when you cook whole fruit slices? I know for zesting it must be avoided due to the taste it gives.
