Great question Im not sure the answer. The spice I used is called Mozambique Peri Peri Fiery African Pepper Rub (All Natural). The ingredients are very similar to those of South African dishes that I have seen and read in many African cookbooks but I do not know for sure. I named the bread after the spice. It's very delicious - I think you would enjoy it. Sorry I dont know for sure. I will research more. :)
I purchased the spice from AJ's which is a gourmet grocery store. However, you can create your own mix by using ginger, lemon peel, pepper, crushed chili pepper, sea salt, garlic, and other natural spices. I would check with a spice book for combinations. As for sprouting, I did not. I'm sure you could sprout them first; I'm just not sure how gelatinous it would be, unless you left the chia seeds unsprouted. I hope you enjoy this recipe! :)
