a word of advice from guitar player to guitar player the more you train your ear the better you'll get. i mean trying to learn songs by listening to them, but it is a lot faster to just watch videos i understand your pain (so to speak)
Very true. Things are a lot easier if you can replicate songs from the sound. Takes a little time and usually trial and error with "Nope, that's a little too high" or "Nope, too low" and changing it.
I personally get a lot more out of hearing it being played, watching hand movements and tabs. Tabs are faster for me than looking at where they are.

btw, i dont think you are playing open E, you are actually playing open D. Your guitar has the capo at 2nd fret but the key is D. Probably your guitar was tuned down some frets ( open C )

I use martin mediums myself. Then I tune the guitar down to a D. If I want to play in E I just use a capo at the second fret.
