It's simple. Just use the scroll wheel on the mouse and scroll back about two notches. It makes it so the camera only moves if you move it with the mouse. Also, I can't stand the autolook thing when you are riding coasters (you are coming to a left turn, it looks left), so clicking once makes that stop.
