  • Timing varies of course but the best guideline is to keep stirring until you can see the bottom of the pan quite clearly. So when you scoop the bottom, the brigadeiro takes a while to level out and hide the bottom of the pan. As for how long it should stay in the fridge, it only needs to get chilled, but it won't harm it if you keep it there for longer. The trick really is to get the cooking point right.

  • much easier to make on the microwave oven. It always gets the perfect consistency and never sticks to the pan/pot (in the stove, it can burn and stick to the metal of the pan)

  • More time in the fridge won't make it harder. Once it get's to the final consistency it won't get harder with the chill of the fridge.

    I use a teaspoon to measure the balls, but heck, you can use a ladle if you'd like! Or just fall face-first into the pot and eat it like a savage :-))

  • Yes the white flakes are dessicated coconut, I'd definitely cover it while in the fridge (so other food smells don't come into it). You should let it cool for 20 mins or so before putting them in the fridge and leave it in the fridge until you're ready to start rolling them.

  • dessicated means to dry out the moisture from something. (its desicated anyway)

  • @ThirdTimeChangedKBA It is... really delicious.. I grew up waiting for the next birthday party just to eat it. Nowadays, whenever I fell like it, I just get a pan, make some, call some friends and eat it with a spoon.. we never roll it... each one of us get a spoon and eat it straight from the pan... just delicious.
