The funny thing is, Ermac got his name from a supposed glitch in the original Mortal Kombat. It was supposed to be that if you were playing as Scorpion for a certain amount of time, a message saying 'Error Macro' came up and turned Scorpion red. Midway decided to take this 'Error Macro' thing and turn him into an actual character, with a name based on the rumored glitch, calling him 'ERror MACro', aka 'Ermac'.
