ただし、四川では、最後にワケギではなく「ニンニクの葉」を使いますので、そこでニンニク風味がプラスします。ニンニクの葉は日本でも時々手に入るので、ワケギの代わりに使いますが、やっぱり、ワケギで作るより出来上がりはおいしいです! お試しあれ

いえいえ、もちろん加えても美味しいと思います。ただ、四川省成都の元祖の作り方を調べると、特に入れていないので、僕も入れてません。それに、入れないで作る方が手間が省けて簡単でいいですよね!(笑)

こんにちは。これは木綿です。木綿でもこのように4、5分煮込んで使えば出来上がりは絹ごしのように柔らかく仕上がります。逆に、豆腐を湯通ししてあまり煮込まずに仕上げる作り方の場合、木綿だと固すぎ、絹ごしの方が口当たりがいいかもしれません

でも私のように自分の作り方だけ知っていてはまだまだだなと言う気がします。他人の作り方をできるだけ多く見れば自分の価値観が出てくるとこの動画を見て思い自分に反省しました。とてもよい動画です。勉強になりました。

Yes. In Japan, most of the kitchen uses gas burner, so it's not that hot right after turning off the gas.
