  • For all you people saying ZOMG IT'S LIKE! GOT ALCOHOL IN IT! OMG GONNA GET DRUUUUNK! It calls for VERY little and that very little amount gets even smaller when you use it in different recipes. Besides, when you buy vanilla extracts, it also contains alcohol.....

  • @Smanthafunny Have you ever eaten cake or cookies? If yes, you've had vanilla extract with alcohol in it. You only use a teaspoon per recipe.

  • No it is not alcohol when it is used for baking. The alcohol evaporates when heated. All that is left is the vanilla flavor. Guess you don't eat fudge either, because it has vanilla.Yum

  • It amazes me how many people don't realize that flavoured extracts are made with alcohol. And how many people don't seem to realize that the actual alcohol content evaporates/burns out in cooking and baking so you're not actually consuming any alcohol. Duh!

  • @funfun223lol You don't drink it, you bake a teaspoon or so into a cake or cookies with it. If you've ever had a piece of cake or a cookie, you have eaten vanilla extract with alcohol in it.

  • @caramelapplecrack I am about halfway through my vanilla right now and some of the beans are starting show at the top. I plan on adding more vodka when it gets down to one quarter and I will let it sit and see. I have read that you can do this, but the vanilla strength will go down.

  • @Toon999kinzpengwo You don't drink it, you use a TEASPOON in a whole recipe of cookies or in a cake. ALL baked goods contain vanilla including those given to children. It won't kill them, it won't make them drunk, it won't hurt them to have a fraction of a teaspoon of vanilla in a portion of cake. Comments like this drive me crazy.

  • My mother in law does this and for my birthday she gave me a bottle of vodka (which I was quite confused by, it's not like her hehe) but then it all made sense when I opened the second present which was the vanilla beans :) Its been "marinating" for 3 weeks now and I can't help myself from opening it every day to smell it. I cannot wait to try it! :)

  • Hey, Tammy. I have a couple questions for ya. So one of em being, what if you were to use those flavored vodkas? Like the Pinnacle ones that are Cake or Whipped Cream flavored? How do you think that'd work? Also, when it's all in the bottle, does the vodka expand/rise as the vanilla beans release their seeds? Or does it rather soak up the vodka in the bean and lessen? And finally, is there any pressure that builds up in the bottle as it sits? Like will it release any pressure when opened?

  • @mchavarria91 I suppose you could use flavoured vodka but only if you want that flavour in ALL the baked goods that you make after that, cookies, bars, cakes etc. The vanilla beans don't swell and the beans do not ferment so there is no gas released (no pressure in bottle).

  • Thanks. You are right homemade is awesome. I used 60 beans and a bottle of Stoli vanilla vodka (their website says they naturally infuse it- I didn't want artificial ingredients either). I'm never going back to store bought.

  • @tewhjsa You can still taste the alcohol, but it is just like the vanilla you buy in the store already made.

  • @rachellesim1013 All recipes websites ask for glass containers. I think the reason for this is two fold. One is that the container will get stained by the vanilla and two that any chemicals in the plastic may leach out into the extract over time. That would depend on the plastic of course. Some liquor bottles are now plastic and any one of those would be okay I think (you would have to be sure that it is food safe and stable over long periods of time)

  • You can always just buy vanilla extract at the store but I guess making your own is really cool too. Oh, and you can get vanilla beans at the store too. You don't have to use eBay.

  • @PhazonDarkSamus Making your own is also cheaper and much much better. Yes they have vanilla beans at the store here,they cost 7 dollars for three beans. On ebay it was 40 for 14 dollars.  Not everyone on youtube lives where you live.

  • Awesome idea. Last year I almost got a kit that includes the Madagascar vanilla beans and a nice bottle. Then of course you buy your own vodka. I want to give it a try. Also would be a super gift for someone who bakes a lot. I am sure it smells amazing.

    This is a great way to make the extract. Been doing this for years as it is much more stronger and richer in flavour/ taste. I keep two bottles going. As one gets low I top it off with a fresh bean and vodka. I cycle them through about three times.

  • @tremendoussdynamite All vanilla extract is made with alcohol. Have you used vanilla extract before? 

    You only use 1/2 to 1 tsp in an average recipe and you won't taste the alcohol with that amount. Besides, vodka has no real flavour.

  • Interesting. I like to use rum for making extract to add a subtle flavor. My family has had a bottle of this in the fridge for +15 years! We use the extract and the beans religiously. It also makes a good gift if you buy a cute little bottle to share a bean with some liquid. Like wine, the longer it sits, the more valuable it becomes!

  • Doesnt it tast like wodka instead of vanilla, which flavor do you tast most?

    Because i dont drink alcohol and wouldn't use this if it tasted more like alcohol then vanilla

  • @Riek2511 Have you ever tasted vanilla extract right out of the bottle? It tastes just like that. You only use a teaspoon or less in most recipes so the alcohol is not really an issue.

  • @decafeine The home-made stuff is twice as fragrant "double strength". We can't purchase double strength vanilla extract here. Just the regular stuff is very expensive very small bottle 2-3oz for $7-8? I've see some online vanilla from Canada for $10 for 4oz (not including taxes and shipping) The one I made was approx $30-35 for 16 oz. Booze is cheaper in the US, so making it there would be cheaper.

  • @maplepoon There will be alcohol in the vanilla, check the back of he bottle. It won't say "vodka", it will say "ethyl alcohol' which is the same thing.

  • Thanks. I've always wanted to make my own vanilla. I usually use Penzey's double strength at $24 a bottle! Homemade is the way to go. :)

  • This is one of those things I've wanted to try and never gotten around to. The finished product looks *extremely* rich, and I'm sure it's boatloads above "store bought."

    When you mentioned sterilizing, I immediately thought, "It's going into 80 proof alcohol. How much more sterile can it get?

    AFA people questioning the booze, if you use regular commercial vanilla extract, it has alcohol in it, too, usually 30 to 40% I believe. NO less alcohol than the vodka. People should read labels. :-)

  • Hey Tammy! My teacher tells me you can make vanilla extract (that's what I think she said) by brewing it. I'm wondering how you do it and what's the difference between them, except the alcohol. Another question: Can you use hot water (above boiling temp.) to extract the vanilla? So it just don't have any alcohol!   • People need to stop bugging out about her using vodka~ that's how it's made & it's not like you'll every need to use five cups.... Most recipes call for a table spoon or two, & that's nothing compared to all the other ingredients you'll have to use. Also, all the alcohol cooks out when baked in a cake or however else you'll cook it

My mom and I made vanilla extract but it didn't turn out nearly as dark as yours but we didn't shake it. Could you make some more international foods? I just watched your Hoddeok video and I love hearing of others trying to make different foods. I love watching your video's because it encourages me to try new things!!!

  • @TheHk145 There is no way kids would drink this by accident. It is 40% alcohol, one sip and they'd be spitting it out, but like anything potentially intoxicating/ dangerous to children it should be stored out of reach. That's just common sense

  • I keep mine under the kitchen sink. It definately takes time to infuse but its worth it. Glad you are making your own. Nothing like a great supply of homemade vanilla.

  • That is AMAZING! Think I'll try this later... but then again, I mainly just use vanilla beans all the time.... It has an AMAZING SMELL compared to vanilla essence.. and the colour! At uni, we got a guy that owns a vanilla bean and cocoa company that imports it in to come in and speak to us/ show us the differences between vanilla beans extract and vanilla essences and etc etc. Was really amazing! Thanks SO much for the recipe :P So going to try it ^.^
